What are Antioxidants?
Antioxidants are substances or nutrients found in our foods that can reduce, neutralize,
slow or prevent damage done to the body by free radicals. Free radicals are electrons
that are no longer attached to atoms. Instead of circling the nucleus of an atom. free
radicals are both free and radical enough to go slamming through our cells and inflicting
damage. Antioxidants are found in many foods. These include fruits and vegetables, nuts,
grains, and some meats, poultry and fish. Antioxidants are also commonly added to food
products like vegetable oils and prepared foods to prevent or delay their deterioration
from the oxygen in the air.
What benefits do Antioxidants give us?
They reduce the Free Radicals that destroy our cells. Early testing results indicate
antioxidants may, and I do stress the word may as this science is still in its infancy,
lead to a greater reduction in risk of chronic disease, specifically for cancer and heart
disease. For some time, health organizations have recognized the beneficial roles fruits
and vegetables play in the reduced risk of disease and developed programs to encourage
consumers to eat more antioxidant rich fruits and vegetables.
